The Rennet Question

Rennet is the enzyme used to coagulate milk in cheesemaking. There are three types:

  • Animal rennet — extracted from the stomach lining of calves. If the calf was not slaughtered according to Islamic rites, the rennet (and cheese made from it) is considered Mushbooh or haram under strict Sunni ruling.
  • Microbial rennet — derived from moulds or fungi. Halal.
  • Vegetarian/FPC rennet — fermentation-produced chymosin. Halal.

Cathedral City does not consistently label which rennet type is used across its full range. Some variants are listed as suitable for vegetarians (indicating microbial or FPC rennet), while others are not.
